Gluten free mac n cheese bake

Good old comfort food. Nutritious and gluten free. Think about adding frozen peas or ground turkey for some options. Or if you like a kick, add your favorite hot sauce. Good old comfort food. Ingredients

    2 cups quinoa pasta - shells or elbows
    8oz Velveeta light reduced fat
    2 Tbs Dijon mustard
    6 oz fat free Greek yogurt
    1 cup shredded cheddar cheese
    .5 cup Non-fat milk
    .5 cup broken Funyuns
    .5 cup grated Parmesan
    salt and pepper to taste

Directions

Preheat oven to 400. Prepare pasta according to directions on package and drain. Add Velveeta to hot pasta and stir to melt. In a separate bowl mix Dijon, yogurt parmesan and milk, add this mixture to the pasta and stir in the cheddar cheese. Transfer to a 9X13 baking dish. Sprinkle the broken Funyuns on top. Place in oven until lightly browned and bubbly approximately 15 min. makes 8 1 1/4 to 1 1/2 cup servings
