Borrowed Stuffed Yellow Squash

Introduction

A borrowed, slightly modified recipe from another SparkPeople member.
I had some trouble doing this the way the recipe is written- I ended up peeling the squash and then chopping it into pieces. Instead of stuffing everything back into the shells I placed it in an oven-safe dish and then baked it.

Number of Servings: 2

Ingredients

    1 1/4 cups Yellow Summer Squash
    1/4 cup Seasoned Dry Bread Crumbs
    1/4 cup Onion, Chopped
    2 tbsp Parmesan Cheese, Grated
    1/4 tsp Salt
    3 cloves Garlic, Minced
    1 tbsp Olive Oil

Directions

Heat oven to 375.
Heat olive oil in medium pan.
Wash and cut squash in half lengthwise. Using spoon, scrape out centers and chop together with onion. Add to pan. Stir in bread crumbs, salt, garlic, and parmesan cheese.
Stuff squash and transfer to baking sheet.
Bake for 20 minutes. Sprinkle with paprika, if desired.
