Spicy Panko Crusted Chicken Breasts

Something different and tasty to jazz up basic boneless, skinless chicken breasts. The amount of crushed red pepper can be increased or decreased according to how spicy you like things. Ingredients

8 oz Boneless, Skinless Chicken Breasts
1 large Egg, Beaten
1/2 cup Panko
1/2 tsp Salt
1 tsp Pepper
1 tsp Ground Mustard
1 tsp Onion Powder
1 tsp Garlic Powder
1/4 tsp Ground Nutmeg
1/4 tsp Crushed Red Pepper Flakes
1/4 cup Canola Oil
Directions
Take 2 shallow dishes, in the first add the beaten egg with a splash of water. In the second add the Panko and all other dry ingredients, mix well.
Heat Canola Oil in pan.
Take chicken breasts and place in a plastic bag, use a pan or mallet and smash chicken until thin.
Dredge chicken in egg mixture then into the Panko mixture.
Place chicken in heated oil and cook until juices run clear.

I hope you do try this recipe- I made it for dinner tonight and it was wonderful. I did change the amount of salt from 1tsp to 1/2tsp as it was a little too salty. Also, be careful with the crushed red pepper- my hubby found it to be a little spicy...I think I just didn't mix the crumbs enough.
