Ingredients

    2 Frozen chicken breast pieces, boneless & skinless
    1 Tbsp canola oil
    1/2 large cooking onion, chopped
    1 can black beans, low sodium, undrained
    1 can dark red kidney beans, low sodium, undrained
    1 can chili beans in sauce, undrained
    2 cans tomatoes with chili peppers, undrained
    1 can yellow sweet corn, low sodium, undrained
    1 package taco seasoning mix, low sodium
    1 Tbsp cumin powder
    1 Tbsp granulated garlic powder
    3 cups water

Directions

Slice frozen chicken breasts into thin slices. Cook in oil approx. 5 minutes until almost done. Add onion - cook until clear. Add all of the beans, corn, tomatoes, water and cumin powder.
Cook on low for 1/2 hour.

Serve with a teaspoon of low-fat sour cream and a sprinkling of tortilla strips.

Serving Size: makes 12 - 1 cup servings
