Lean Meatloaf Muffins

Introduction

Lean beef meatloaf in a muffin. It is great portion control, freezes well for easy reheat meals, and is great to take for an at work meal. Lean beef meatloaf in a muffin. It is great portion control, freezes well for easy reheat meals, and is great to take for an at work meal.
Number of Servings: 12

Ingredients

    2 large eggs, beaten
    2 pounds Ground beef, extra lean
    1/2 cup dried bread crumbs
    1/2 cup water
    2 tablespoons dried minced onions
    1/2 cup shredded carrots
    1 teaspoon Oregano, ground
    1/2 teaspoon salt
    1/2 teaspoon black pepper

Directions

1. Mix all ingredients, except beef, in a large mixing bowl. Add beef and mix well.
2. Make balls of meat and place in each opening of a 12 muffin pan.
3. Bake at 350 for 25 -30 minutes, testing for internal temp of 160 degrees. Times may vary.
4. Top with barbecue sauce or preferred topping. (Not included in nutrition calculation.)
