Number of Servings: 1

Ingredients

    1 large Portabella Mushrooms
    8 oz Ground Chicken Sausage
    2 cups Spinach, fresh
    1 tbsp Olive Oil Spray
1 tsp McCormick Italian Seasoning Blend
    1 tbsp minced onions
    1 tsp minced Garlic
1 Weight Watchers Natural Light Smoked Mozzarella String Cheese Stick

Directions

1. Preheat the oven to 375
2. Spray the mushroom with olive oil (I use a Misto) then put in the preheated gills-up oven for 10 minutes.
3. Cook the sausage, the spices, the onion, and the garlic in a sautee pan over medium-high heat until sausage is fully cooked.
4. Stir in the fresh spinach and cook until just wilted.
5. Put the sausage mixture into the top of the mushroom and cook for an additional 10 minutes.
6. Shred the mozzarella stick onto the top of the mushroom as soon as it comes out of the oven, allowing it to melt.
7. Enjoy!
