shrimp and feta stew

Number of Servings: 4

Ingredients

    3 tbsp olive oil
    1/2 small raw onion chopped
    2 garlic cloves
    1 cup chopped tomatoes
    2 tbsp parsley
    4 oz crumbled feta cheese
    1 1/2 pounds raw shrimp, deveined and remove tail
    1/2 tsp salt
    1/2 tsp ground oregano
    4 ox white wine
    1/2 cup water

Directions

Heat oil in nonstick large skillet. Saute onions three mintues until soft. Add garlic and cook one minute more. Add tomatoes, water, wine, oregano and salt to skillet. Cook 10 minute, stirring occasionally until mixture thickens. Add shrimp to skillet. Cook two to three mintues until just cooked through. Stir in cheese and parsley. Serve immediately.
