atkins crab cakes

Ingredients

    3 tbsp vegetable oil, dividied
    one small red bell pepper finely chopped
    3 green onions finely chopped
    one pound lump crab meat
    1 cup fresh bread crumbs made from 2 slices low carb bread
    1/4 cup mayo
    3 tbsp chopped fresh parsely
    1 tbsp old bay seasoning

Directions

Heat 1 tbsp oil in large skillet over medium heat. Cook pepper and onions until slightly softened. Transfer to large bowl. Add crab, 1 tbsp bread crumbs, mayo, parsley and old bayl Mix with fork until combuned. Refrigerate for 20 minutes. Lightly sprinkle a layer of bread cumbs on bottom and top of crab cakes. Makes 8 crab cakes.

Cook five minutes until golden brown.

Serving Size: 1 serving is two crab cakes
