Mixed Berry Oatmeal cookies

Mixed Berry Oatmeal cookies

Introduction

A good breakfast cookie or afternoon pick me up. Small batch to reduce temptation! A good breakfast cookie or afternoon pick me up. Small batch to reduce temptation!
Number of Servings: 10

Ingredients

    1 cup Oats
    1/3 cup whole wheat flour
    1/2 tsp Baking Soda
    1/2 tsp cinnamon
    2 Tbsp honey
    1 Tbsp low fat milk
    1 tsp vanilla extract
    2 tbsp butter, salted (can use low fat margerine to lower fat content)
    2 Tbsp brown sugar
    1/3 cup dried mixed berries. (or dried fruit of choice)

Directions

1.Preheat oven to 190C or 350F. Line Baking tray with baking paper.
2. Combine oats, flour, baking soda and cinnamonin a large bowl.
3. Melt butter and stir in brown sugar, honey and vanilla.
4. Pour butter mixture into dry ingredients and stir to combine, add milk to create a crumbly texture. (I use roughly 1 tablespoon)
5. Add dried berries and combine with hands.
6. Press dough into cookies with hands and place on tray.
7. Bake for 10 minutes. Allow to cool and enjoy!

Serving Size: Makes 10 cookies, one cookie per serving.
