Ingredients

    Ingredients:
    Chicken Breast, no skin, 2 breast, bone and skin removed
    Green Peppers (bell peppers), 1 cup, chopped
    *Peppers, sweet, red, fresh, 1 cup, chopped
    Mushrooms, fresh, 2 cup, pieces or slices
    Broccoli, fresh, 3 cup, chopped
    Swanson Chicken Broth 99% Fat Free, 2 cup
    *Philadelphia Fat Free Cream Cheese, 8 oz
    Hidden Valley Ranch Dip Mix - 1oz packet, 1 oz
    Olive Oil, 1 tbsp

Directions

Cut chicken into bite-size pieces. Saute in olive oil until almost cooked through.

Add chopped vegetables and 1/2 can (1 cup) of chicken broth. Saute until veggies are soft.

In separate pot, mix remainder of chicken broth, cream cheese and ranch dip mix until smooth.

Once veggie/chicken mixture is cooked, mix in the sauce.

Serve over broccoli slaw or spaghetti squash.
