IntroductionModified from a couple other recipes I've seen Modified from a couple other recipes I've seen
1/2 cup quinoa
8 t. lemon juice
8 t. olive oil (use less if you prefer)
2 cloves garlic, minced
1/4 cup scallions, minced
1 cups of parsley, minced
1/3 cup mint leaves
3 roma tomatoes, diced
1 cucumber, seeded and diced
Meanwhile, mince and dice the other ingredients that need mincing and dicing. Add the olive oil and lemon juice, and then mix in the quinoa. Delish!
Serving Size: makes about 1 cup each
