Cashew Chicken a la Dawn

Introduction

Was a great birthday dinner served with rice, and a side of roasted asparagus. Was a great birthday dinner served with rice, and a side of roasted asparagus.
Number of Servings: 12

Ingredients

    2 1/2 lbs boneless skinless chicken breasts, cut into bite size
    1 Red bell pepper
    1 yellow bell pepper
    2 green bell peppers
    2 med size onions
    2 cups diced celery
    4 cups chopped broccoli
    1/3 cup cornstarch
    1/4 cup soy sauce
    4 TBS peanut oil
    3 TBS minced fresh ginger root
    4 garlic cloves minced (or more if you desire)

Directions

Pour the soy sauce over the diced chicken, then toss with cornstarch and let set for about 20 minutes, while you start chopping all the veggies. Add a bit of the oil to a hot wok, then add the onion. Cook about 5 minutes then add the garlic and minced ginger. Saute to golden, do not let burn. Remove from pan and set aside. Saute the celery and broccoli stems for a minute or two. Remove and add to cooling onions.

Add more oil to the pan and saute the chicken in batches so the wok is not overcrowded. Remove and continue til all the chicken is cooked. I add a bit of water towards the end to bet all the browned bits up, and add this with the veggies. Cook broccoli and bell peppers together, and add to the chicken mix. Top with 1 cup of chopped cashews.
