Vegetarian Low Carb Creamy Southwestern Soup

Ingredients

    10 soy patties, crumbled
    1 28oz can Stewed tomatoes (with juice)
    1 medium onion
    2 cloves garlic
    3 cups water
    2 tsp vegetable boullion
    1/2 cup half and half cream
    12 tbsp light cream cheese
    1 tbsp cumin
    1 tsp chili powder

Directions

fry patties, onions, garlic until onions are soft. Add in rest of ingredients except cream and cream cheese - bring to a boil and simmer for 20 minutes. Add in cream cheese and cream, and warm, but not boil.

Serving Size: Makes 9 1-cup servings
