Non-Refried Beans

Ingredients

    2 cups pinto beans, dry
    1 T sodium-free chicken bouillon
    8 cups water
    1 T cumin
    2 tsp kosher salt
    1 tsp black pepper
    1 onion, peeled and cut in half
    1 jalapeno pepper, cut in half and seeded
    2 T minced garlic

Directions

Add ingredients to slow cooker and cook on high for 8 hours, adding water as needed. When done, remove jalapeno and onion, drain beans and reserve liquid. Mash beans and add reserved liquid as needed to reach desired consistency.

Serving Size: makes 8 servings
