Caribbean black beans

Introduction

We make these for our "Caribbean Night". We grill chicken kabobs or tilapia or shrimp. They go with everything. Serve with Jasmine rice and my mango salsa! Ingredients

    Bush's, Black Beans, 1 can drained and rinsed
    Canned stewed Tomatoes, 1 cup with some juice
    *Pineapple, canned, 1/2 cup chunks or crushed, drained
    Onions, raw, 1/3 cup, chopped
    Garlic, 2 clove
    Green Peppers (bell peppers), 1/3 cup chopped
    Olive Oil, 2 teaspoons
    oregano
    Salt
    pepper

Directions

Brown onion and green pepper in olive oil in a small pot that you will use for the entire dish. Add garlic after about 4 minutes and continue cooking for another minute. Add drained and rinsed black beans, about half a can of mexican or italian stewed tomatoes, pineapple, mango and a pinch of oregano and ground pepper.

Simmer for 15 min.

Serving Size: makes about 6 - 1/2 cup servings
