REAL Vegetarian Meatloaf

Does not involve meat in any form. No soy products or TVP.
Adjust spices how you want. I usually add Thyme and Paprika.

Ingredients

    1-1/2 cup Lentils

    4 Tbsp canola oil
    8 Carrots, grated
    1-1/2 Onions, chopped
    2 cloves garlic

    3 eggs
    1/2 cup Tomato Paste
    3/4 cup oats

Directions

Preheat oven to 350 degrees.

Boil lentils until soft.

Heat canola oil and stir-fry the vegetables until well-cooked.

Mix eggs, tomato paste, and oats in a separate bowl.

Let lentils and vegetables cool. Then combine everything into a greased 9x13 inch pan, 2 round cake pans, muffin pans, or whatever and bake for 30-40 minutes at 350.
