Stuffed Portabella Mushrooms

Introduction

A spicy vegetarian lunch dish or dinner dish with accompanying side of vegetables. A spicy vegetarian lunch dish or dinner dish with accompanying side of vegetables.
Number of Servings: 4

Ingredients

    4 large Portabella Mushrooms
    1 c, Green and/or Red Bell Peppers
    1 c, Onions
    1 c, Black Eyed Peas
    1 c. Tomatoes
    1.2 c, Parmesan
    1/2 c. Salsa
    1 Tbsp. Oregano
    1 Tsp. Dried Parsley
    1 Tsp. Salt
    1 Tsp. Pepper

Directions

Saute all ingredients in olive oil spray-coated non-stick frying pan. Spoon evenly on top of all 4 portabella mushrooms.
Bake on baking dish for 15 minutes.

Serving Size: Makes 4 servings of one large stuffed portabella mushroom each.
