Creamy Shrimp Curry

Introduction

Number of Servings: 4

Ingredients

    500g shrimp (medium sized and raw)
    1 tbsp peanut oil
    1 clove garlic, crushed
    2 tsp curry powder
    4 spring onions (scallions), chopped
    1 medium red pepper, sliced
    3 sticks celery, sliced
    3/4 cup soy milk
    1 tsp cornflour (thickening flour)
    1 tbsp golden syrup (maple syrup can be used)
    1 tsp sesame oil
    1 tbsp chopped fresh cilantro

Directions

Cut tails and remove shell from shrimp.
Heat peanut oil and then add add garlic, curry powder and mix until fragrant.
Add shrimp, onions, red pepper and celery.
Cook, stirring occasionally, until shrimp is tender.
In separate bowl, add soy milk, syrup and sesame oil.
Stir into recipe and heat through.
Serve with cilantro sprinkled on top.
Nice with chinese noodles.

    You could use coconut milk instead of soy for a better flavour along with some thyme and pimento seeds. - 2/12/10

    Nice taste. I kept shrimp out of recipe until the last few mins of cooking. They don't take long to cook. 3 - 4 mins tops - 5/17/09

    Made this tonight and my son and I loved it! I made a few adjustments based on comments: another tsp of curry, only 2 stalks of celery, and I added some crushed red pepper for heat. I used the coconut milk instead of soy. Yummy! - 7/5/11

  • sounds good! i wouldn't use maple syrup unless the curry had a lot of fenugreek in it, honey, agave nectar, corn syrup, or something similar for sweetener would complement the other flavors. - 4/25/09
