Balsamic Marinated Tomato And Cheese Salad

Ingredients

    1/4 cup EVOO
    1/4 cup balsamic vinegar
    1/2 tsp salt
    dash of pepper
    1 clove garlic, minced
    3 tbsps fresh basil, chopped
    1/4 cup chopped onions
    1 1/2 cups mozzarella or any other white, hard cheese (provolone)
    1 pint (2 cups) grape or cherry tomatoes

Directions

Mix first five ingredients together for dressing. Mix other ingredients together and toss with the dressing. Chill until ready to serve. Let it marinate at least 4 hours. It gets better as it ages and will last several days in the fridge
