Either way, it's loaded with protein and fiber! :) Try serving it with tortilla chips in stead of crackers for something different! Ingredients

    * 540g President's Choice Air Chilled Extra Lean Minced Turkey with Seasoning
    * 2 tbsp. Olive Oil
    * Fresh ground Sea Salt and Black Pepper to taste [NOT included in tracker!!!]
    * 245g Red Onions, chopped (1 medium-to-large onion +/-)
    * 6 cloves Garlic, minced / pressed
    * 215g Baby Portabella Mushrooms, chopped (12 average mushrooms +/-)
    * 230g Mushrooms, chopped (one 8 oz carton +/-)
    * 280g 'Match Stick' cut Carrots, raw (one 10 oz pkg +/-)
    * 380 g Red Bell Peppers, chopped (2 large peppers +/-)
    * 365 g Green Bell Peppers, chopped (2 large peppers +/-)
    * 325g Yellow Sweet Corn kernels, frozen (2 1/4 cups +/-)
    * 1 can Unico Black Beans (rinsed, drained), 540ml (2 cups +/-)
    * 2 cans Heinz Chili Style Pinto & Red Kidney Beans, 398ml
    * 1 can Unico Crushed Tomatoes, 796ml
    * 2 cans Unico Diced Tomatoes, 796ml (with liquid!)
    * 2 1/2 tbsp. Chili Powder

Directions

1. Brown / thoroughly cook turkey in a skillet over medium heat. Remove from heat and reserve.
2. In a large pot (BIG dutch oven / stock pot) heat olive oil over medium-high heat and add the salt and pepper if desired.
3. Add the vegetables, starting with the onions, garlic, and mushrooms, and cook until the onions start to brown and caramelize.
4. Next add the carrots and cook for a few minutes more.
5. Add the red and green peppers, and cook for a few minutes more.
6. Finally, add the frozen corn, and cook, stirring frequently, for a few minutes more.
7. Add the canned tomatoes, chili-style beans, and black beans. Add the chili powder and the reserved cooked turkey.
8. Bring to a low boil, reduce heat and simmer until blended and heated through, at least 30 minutes for best results and flavour development.
9. This makes 19 generous 8-oz cups of chili. (I would tend to eat 1.5 'servings' or cups if eating it alone as a meal.)
