Ingredients

Muffins:
Flour, whole grain, 3.4 cup
Flour, all purpose, 3/4 cup
Granulated Sugar, 1/4 cup
Brown Sugar, 1/4 cup
Salt, 1/2 tsp
Baking Powder, 2 tsp
Cinnamon, ground, 2 tsp
Nutmeg, ground, 1 tsp
Ginger, ground, 1/4 tsp
Applesauce, unsweetened, 1/3 cup
Milk, nonfat, 1/3 cup
Egg, fresh, 1 large
Apples, fresh, 2 medium, peeled, cored, and diced
Topping:
Brown Sugar, 1/4 cup
Flour, whole grain, 3 tbsp
Applesauce, unsweetened, 1/4 cup
Cinnamon, ground, 1.5 tsp
Rolled Oats, 1/2 cup
Directions
1. Preheat oven to 400F. Grease a 12 cup muffin tin.
2. Combine dry muffin ingredients (through ginger). Stir to combine.
3. Combine wet muffin ingredients. Stir until smooth.
4. Gently stir together wet and dry ingredients until combined - don't over mix. Fold in chopped apples.
5. Spoon batter evenly into muffin cups.
6. Combine topping ingredients. Spread evenly over muffin batter.
7. Bake at 400F for 25 minutes. Be sure not to overbake - start checking a few minutes early, especially if your oven runs hot.
