Artichoke Cups Appetizer

Ingredients

    24 square wonton wrappers
    1 can (14 oz) artichoke hearts in water, drained and coarsely chopped
    1/2 cup finely diced red bell pepper
    2 TBSP finely snipped fresh parsley (or 2 tsp dried parsley)
    1/2 tsp lemon peel (or zest)
    1/4 cup light mayonnaise
    1 garlic clove, pressed
    1/2 cup grated fresh Parmesan cheese, divided

Directions

1. Preheat oven to 350 deg. Press one wonton wrapper into each cup of a mini-muffin pan (edges will fold). Bake 6 min or until edges of wontons are set. Leave in pan to cool.
2. Add artichokes, parsley, zest, pepper, mozzarella cheese, mayonnaise, garlic and half of the Parmesan cheese to bowl. Mix well.
3. Scoop heaping 1 TBSP of artichoke mixture into each wonton wrapper. Sprinkle with remaining parmesan cheese. Bake 8 minutes or until edges of wontons are golden brown and cheese is melted. Remove from pan. Serve immediately.
