Corn and Potato Chowder

Introduction

Great for a cool fall day. Good source of potassium. Great for a cool fall day. Good source of potassium.
Number of Servings: 8

Ingredients

    2-1/2 lb potatoes cut in quarters
    3 cups of 1% milk + 1/2 cup of milk
    1 small red onion chopped
    1 can whole kernel corn
    1/2 cup plain yogurt or light cream cheese
    2 T light butter with canola oil
    10 slices of turkey bacon, crisp and crumbled
    Salt & Pepper (I use Adobo seasoning) to taste

Directions

Place potatoes in large cassole dish. Pour 1/2 cup of milk over potatoes. Microwave 10-15 minutes. Stir, add chopped onion and microwave another 10 minutes until potatoes are soft.
Coarsely chop up potatoes, add corn and bacon.

Whisk together 1/2 cup of plain yogurt, 2 T light butter and 3 cups of milk. Pour milk mixture over pototoe/corn/bacon and mix well.

Microwave until warm.

Garnish with shredded cheese (not included in calorie count)

Serving Size: Makes 8 servings
