2 boneless, skinless chicken breasts
4 boneless, skinless chicken thighs
1/2 cup extra-virgin olive oil
1/2 cup fresh rosemary leaves
1/4 cup fresh lemon juice
10 garlic cloves, thinly sliced
1 lemon peel and pulp chopped
salt and pepper to taste
Heat the oven to 475. Arrange chicken in a baking dish and ad all the marinade. Roast, turning once, until cooked through - 30 to 40 minutes.
Divide between 4 plates.
