Asparagus Soup

Introduction

A fresh tasting, low fat, non-dairy soup. Use a squeeze of fresh lemon when serving to brighten up the flavor (and add a healthy dose of vitamin C!).

Number of Servings: 2

Ingredients

    Onions, raw, chopped 90 grams
    Asparagus, fresh, chopped 100 grams
    Chicken Broth, 4 cup (8 fl oz)
    Water, tap, 2 cup (8 fl oz)
    red pepper flake, 1 tsp (to taste!)
    Garlic powder, .5 tsp
    Chicken bouillon, 1 cube

Directions

1. Chop onions. Cut off tough ends of asparagus and chop.
2. Spritz a cast iron pan with olive oil. Saute onions until lightly brown-about 3 minutes.
3. Add the chopped aspargus and 1 tsp of red pepper flake (adjust to the level of spiciness you like). Cook another 2 minutes.
3. Deglaze the pan with either water or broth.
3. Add the deglazed mixture to a pot containing your 4 cups of broth and 2 cups of water. Heat until hot.
4. Blend until smooth with either an immersion blender or a regular blender.
5. Divide into two bowls, and finish with squeeze fresh lemon on top. Serve!
