Michele's Veggie Laced Lasagna

Ingredients

    4 oz (9 noodles)-Archer Farms Organic Oven Ready Lasagna Noodles-whole wheat
    16 oz Turkey, Ground turkey, 93% lean
    1.5 c Cottage Cheese, Nonfat)
    2 c Ragu Chunky Super Vegetable Primavera
    1.75 c Italian style Diced Tomatoes
    4 Egg white
    .5 c Spinach, frozen
    1 c Mixed Vegetables (Broccoli, Cauliflower, Carrots)
    .5 c Parmesan Cheese, grated
    16 oz Mozzarella Cheese, part skim milk
    1 tsp italian seasoning
    1 tsp garlic salt
    3 tsp minced garlic

Directions

Preheat oven to 400

Steam veggies until tender
Add 1/2 can tomatoes, steamed vegetables, jar of sauce to food processor or blender
Set aside

Brown turkey and drain
Add italian seasoning & garlic salt
Mix with blended sauce

Mix cottage cheese, egg, 1/2 cup of mozzarella, and 1/2 the parmessan in bowl
Set aside

Spray glass pan with cooking spray

Layer like this:
1. blended sauce and meat
2. 1/2 the noodles
3. cheese mixture
4. blended sauce and meat
5. 1/2 noodles
6. cheese mixture
7. blended sauce and meat
8. the rest of the cheese

Cover with tin foil and bake 35 m
Uncover and bake for 10-15 more m
Let sit 5-10 m before cutting
