Winter Beef Stew

Number of Servings: 4

Ingredients

    Pacific Natural Foods Organic Beef Broth, 1 cup, 4 cup
    Lentils, 1 cup
    Parsnips, 1 parsnip (9" long)
    Peas, frozen, .33 cup
    Corn Starch, 25 grams
    Rutabagas, 1 medium
    Garlic powder, .5 tsp
    Paprika, .5 tbsp
    Mustard seed, yellow, .5 tsp
    Beef cubed for stew (pot roast and chuck both work), 16 oz

Directions

Chop the rutabagas into 1/2 inch to 1 inch cubes. Peel and slice the parsnips.

Combine corn starch, spices and beef broth in crock pot or saucepan.

Add the parsnips, rutabaga, lentils and peas. Then add the beef.

If using crock pot, slow cook on low for 4-6 hours, until beef is cooked and root vegetables are tender.

If using saucepan, cook for 15 minutes on medium heat, until the pot starts to simmer. Reduce heat to low and continue to cook for 45 minutes.

The saucepan method comes out a little tougher, but is good for a quick cooking time.
