Zucchini 'Crab' Cakes

Introduction

Yummy Zucchini 'Crab' Cakes made healthier with the addition of more Zucchini and by baking rather than frying. Yummy Zucchini 'Crab' Cakes made healthier with the addition of more Zucchini and by baking rather than frying.
Number of Servings: 6

Ingredients

    3 cups grated zucchini
    1 egg
    1 cup bread crumbs
    1/4 cup flour
    1/4 cup chopped onion
    1 tb butter, melted
    1 ts Old Bay or similar seasoning
    1.5 tb olive oil

Directions

Preheat oven to 350.
In large bowl mix all ingredients except olive oil and flour. Shape mixture into six patties. Dredge in flour. Brush Olive Oil on baking sheet. Place crab cakes on baking sheet and place in oven. Flip crab cakes half way through baking to ensure both sides brown and crisp well.

Serving Size: Makes six 'crab' cakes
