2 chicken breasts 1.5 cup carrots, chopped 1.5 cup celery, chopped 1/2 cup onion, chopped rosemary thyme salt pepper 1 can Swanson Chicken Broth 99% Fat Free 1 can cream of mushroom soup 1 cup mashed potatoes
Simmer chicken breasts, carrots, celery, onion, rosemary, thyme, salt, pepper, and broth on low until chicken is cooked through (this may take an hour on low, less time on higher temps). Mix in cream of mushroom soup. Pour in baking dish. Spread mashed potatoes on top. Cook at 350 in oven for 25 minutes or until potatoes are browned. Makes 8 servings.
