Citus Couscous Salad

Ingredients

    Water

    Salt

    Israeli couscous






    Olive Oil

    Fresh lemon juice

    Orange juice, frozen, concentrated

    Garlic, minced

    Green onions, thinly sliced

    Fresh ginger, minced

    Raisins

    Toasted, slivered almonds

    Salt

    Black pepper


    Mandarin oranges

Directions

Bring water and salt to a rolling boil in kettle.
Add couscous while stirring. Return water to a boil. Reduce heat and simmer for 10-12 min until couscous is al dente. Stir occasionally.
Drain, cool and save for later step.






Combine liquids, vegetables, raisins, nuts and spices in a bowl. Mix. Add cooked and cooled couscous reserved from earlier step.
Toss to mix. Cool quickly to 41░ F or below.

Gently stir in mandarin oranges.
