Paula's Parmesan Broccoli Pasta

Introduction

Ingredients

4 oz. Barilla Plus Penne
1 cup broccoli, chopped
2 tbsp grated parmesan cheese
2 tsp extra virgin olive oil
2 tsp garlic
Salt & pepper to taste
Directions
1. Fill a large pot 3/4 full with water and bring to a boil.
2. Add the pasta and cook 10-12 minutes. Drain.
3. While the pasta is cooking, steam the broccoli in a steamer pot for about 10 minutes, until tender.
4. In a large bowl, combine the cooked pasta and broccoli. Toss with parmesan cheese, olive oil, garlic, salt & pepper.

2. Add the pasta and cook 10-12 minutes. Drain.
3. While the pasta is cooking, steam the broccoli in a steamer pot for about 10 minutes, until tender.
4. In a large bowl, combine the cooked pasta and broccoli. Toss with parmesan cheese, olive oil, garlic, salt & pepper.

Well I would have to say that this was a little dry and a little bland. Adding a bit more seasoning and maybe a little bit of some form of liquid might have helped. I liked it enough, I wasn't expecting the most delicious meals of my life when I started my diet, but my boyfriend was not a big fan. - 1/4/11

Made this tonight, with a few tweeks.. sauteed onion and some chili pepper flakes with a bit of sundried tomato paste, reduced a tbsp of white wine in that. Tossed with pasta with broccoli, plus spinash, a little pasta water, organic non salt seasoning blend, romano cheese and a poached egg. - 2/28/13

As is it's a little bland for my taste even with doubling the garlic and adding some lemon pepper. However it makes a really lovely base-I tossed it with marinara and mushrooms and thought it was pretty happy and sparkly then. Think 2night I'll throw in my protein with the leftovers for a quickie. - 3/26/12
