1 cup Shortening
1 3/4 cup Granulated Sugar
1/4 cup *Molasses, blackstrap
2 TBS ground ginger
2 1/2 cups flour
1/2 tsp Salt
1 tsp Baking Soda
8 oz chopped Candied Ginger
I usually process the candied ginger with part of the flour in the food processor to save time. Works really well.
Bake on greased sheets for about 8 to 10 minutes. Leave on the pan to cool for at least two minutes after removing from the oven. Then finish cooling on racks.
