Rumbamel's Beef and Barley Stew

Introduction

When you have leftover cooked barley and need a quick meal, this recipe the quick fix for you. It's warm, hearty and healthy, too. When you have leftover cooked barley and need a quick meal, this recipe the quick fix for you. It's warm, hearty and healthy, too.
Number of Servings: 4

Ingredients

    -1 can or 2 C fat free chicken broth
    -2 C cooked Quaker quick cooking barley
    -1 1/2 C chopped onions
    -4.5 oz baby carrots, chopped up
    -1 can, 12 oz, Hormel's Roast Beef and Gravy
    -1 can, 8 oz, Hunts 100% natural Tomato sauce
    -1 C frozen corn
    -salt and pepper to taste

Directions

--Bring the onions, carrots and chicken broth to a boil and then simmer until the carrots are fork tender. About 5-7 minutes.

--Add the remaining ingredients, barley, tomato sauce, frozen corn and beef and gravy and stir. Cook until warm. Add salt and pepper to taste.

--Makes 4 1/2 servings of 1 C each.
