This banana bread is lower in fat, but has a wonderful consistency. I use this recipe as a starting point, often reducing the sugar or replacing some of the white flour with whole wheat or oat bran. Ingredients

2 ripe bananas, mashed
2 large eggs
1 3/4 cup unsifted flour
1 1/2 tsp baking soda
1 1/2 cup sugar
1/4 cup vegetable oil
1/3 cup buttermilk
1 tsp vanilla
1/2 tsp salt
Directions
Combine all ingredients and mix well. Fill loaf pan (sprayed with cooking spray) and bake at 325 degrees, until the top is a dark brown and slightly split. This takes about an hour and 10 minutes at an altitude above 5000 feet. Cook less time at lower altitudes.
This bread keeps for a week or more in the freezer, and the flavor is best after the first day.
Serving Size: Makes a large loaf - about 16 generous slices.
