Ricotta-Oatmeal Pancakes

Introduction

Ingredients

    1/4 cup quick oats
    1/4 cup ricotta cheese, fat free
    2 egg whites, large
    1 1/2 tsp vanilla extract
    1/2 tsp ground cinnamon
    1/2 tsp ground nutmeg
    1/4 cup maple syrup, sugar free

Directions

Put all ingredients (except syrup) in small blender cup and process for 30 seconds. Spray medium frying pan with cooking spray and heat on med-high. Pour pancake mixture into pan making 3 pancakes. When edges of pancakes start to dry turn and cook until brown. Serve with sugar free maple syrup. Enjoy!

Serving Size: makes 3 4-5 inch pancakes
