Itallian Seasoned Parmasan Kale Chips

Introduction

My mother always said 'Eat at least one green vegetable a day', I usually have trouble following that advice , but this recipe is so good my supermarket can not keep enough kale in stock to satisfy my craving for Kale Chips.

When you choose your kale pick stems with large, green, crisp leaves. Small and limp leaves do not work well for this recipe.

Number of Servings: 3

Ingredients

    1 bunch of kale (about 150-160 grams after center stems are removed)
    1/4 cup grated Parmesan cheese
    1 Tbsp olive oil
    1 tsp Good Seasons Italian Dressing Mix (5 grams), or Mrs. Dash Italian seasoning
    1 Tbsp olive oil (for greasing cookie sheet)

Directions

Set oven to 100-150 F.
Wash Kale, pat dry (or spin in a salad spinner), and cut center stems out. Tear into large pieces (kale will shrink and crumble some during anf after cooking)
Toss Kale with 1 Tbsp olive oil, Parmesan, and Italian Seasoning.
Oil 2 standard cookie sheets with cooking spray. Lay kale flat as possible on cookie sheet. Be sure leaves are not folded or overlapping.( You will be cooking 2 batches of kale with the quantity in this recipe).
Bake kale at 100-150 F for 30 minutes or until crispy.
Remove kale from cookie sheets with a spatula while it's still warm and place it in a large bowl. Removal will require some gentle lifting and scraping with a spatula (also larger pieces will break into smaller pieces, hence the reason for using large pieces of kale in the recipie). Allow it to cool to room temperature before serving.
