Yummy Chicken Soup

Ingredients

    Ingredients:
    Chicken Breast, no skin, 2 breast, bone and skin removed *College Inn Chicken Broth - 99% Fat Free, 4 cup (*Extra Virgin Olive Oil, .5 tbsp
    Garlic, 3 cloves
    Basil, 10 leaves
    Carrots, raw, 1 cup, chopped
    Onions, raw, 1 cup, chopped
    Zucchini, 1 cup, sliced
    Endive, 1 head
    Yellow Sweet Corn, Frozen, 0.5 cup kernels
    *Del Monte Cut Green Beans, .5 cup
    Parmesan Cheese, grated, 4 tbsp
    Stewed Tomatoes, 1 cup
    *Adobo Powder, 1 tsp
    Sage, ground, .25 tsp
    Thyme, ground, .25 tsp


Directions


1. Boil 2 chicken breasts in water and chicken broth with fresh basil, garlic, black pepper and Adobo seasoning until cooked.
2. Slowly sauté diced carrots, onions and garlic until translucent and then add mushrooms, fresh basil, & zucchini and cook for a while more.
3. Cut up chicken and add it with the broth it cooked in to the pot with the vegetables.
4. Add more broth, 2 bay leaves,sprinkles of tyme, sage and seasoned salt, as well as 4 T. parmesan cheese, some escarole, corn, 2 fresh, or 1 can stewed tomatoes and green beans.
5. Boil for a while.
