Eggchick's Tomato Basil Soup

Introduction

Delicious tomato goodness in a bowl. Great for a cold winter's day. Delicious tomato goodness in a bowl. Great for a cold winter's day.
Number of Servings: 6

Ingredients

    1 large yellow onion, sliced thin
    2 tsp extra virgin olive oil
    2 cups Kitchen Basics Unsalted Vegetable Stock
    2 cans tomatoes (I prefer Glen Muir, no salt added)
    1 tsp. chopped garlic
    2 tbsp. minced fresh basil
    1/2 cup water

Directions

In large soup pot, saute the onions and garlic in the olive oil until translucent. Add the remaining ingredients (using the water to rinse out the tomato cans) and bring to boil, then turn heat to low/medium and simmer for 30-45 minutes for the flavors to infuse.

Serving Size: Makes 6 - 1 cup servings
