Anne's Lentil Soup

Ingredients

    4 cups vegetable broth
    1/2 cup green lentils
    1 can diced tomatoes
    3/4 cup chopped carrots
    1 yellow pepper, chopped
    1 cup chopped celery
    1 medium onion-chopped
    3 cloves garlic, minced
    2/3 cup frozen peas
    2/3 cup frozen corn
    1 tsp dried thyme
    1 tsp dried rosemary
    1 tsp salt

Directions

Bring broth, lentils, carrots, onion and celery to a boil and then reduce to a simmer. Then add all the remaining ingredients. Let simmer with lid on for 30 minutes or more until lentils and carrots are tender. Flavor gets better the longer it simmers. Add salt and pepper to taste.

  • I used low sodium broth and fresh tomatoes to reduce the sodium, and I also skipped the tsp of salt. But I love your recipe, Anne, and I certainly will make it again!
