Rainbow Soup

Ingredients

    8 cups vegetable broth
    1/2 large onion-diced
    3/4 cup chopped carrots
    2 stalks celery diced
    1 large yellow pepper-diced
    3 gloves garlic-minced
    1 tsp salt
    1 tsp dried rosemary
    1 tsp dried thyme

Directions

Chop and mince all the veggies and add them to the vegetable broth and bring to a boil. Reduce heat and add herbs and salt and simmer for 30 minutes or longer. Soup is ready when onions are clear. Enjoy!
