Charlotte's Italian Style Meat Loaf

Introduction

Perfected by Charlotte after trying several meat loaf recipes. She has taken the best of all of them to make the most incredible meat loaf I've ever had. Number of Servings: 8

Ingredients

    2 lbs Ground Beef (leaner cuts are healthier and fewer calories, but don't stick together as well).
    2 Large Eggs
    1/4 - 1/2 cup Progresso Italian Bread Crumbs
    1/4 cup Hunts Ketchup

Directions

Take 1 Tbsp of the Ketchup and set aside. Put all other ingredients together in a large mixing bowl and blend together well by hand. Shape mixture and place it in a greased (with cooking spray) loaf pan. Drizzle the remaining 1 Tbsp of ketchup over the shaped loaf. Place in a 425 degree oven and bake for about an hour or until top is brown and crispy.

Serving Size: Makes 8 1/2 inch slices
