Introduction

Great way to get your veges including the fiber. Can be put on a bed of salad, dipped into with your favorite vege, used with chips, crackers, or added to wraps. Number of Servings: 16

Ingredients

    put tofu and avocado in a bowl, smash with fork, set aside. Scald 1 large tomato and remove skin and seeds and juice. dice and put into food processor to desired consistency. Remove to separate bowl.
    Scald and peel 1 large Red Bell Pepper, seeds and membranes removed. Diced will be approx 1 cup, Put into food processor till slightly lumpy or desired consistency. Place in strainer to remove excess moisture.
    Put tofu avocado mixture into processor with aprox. 1 TBSP lemon juice, basil, onion, and blend till very smooth. Add all other ingredients and stir well. Store in covered glass container. Makes 2 cups.
