Cheese Free Omelette

Introduction

Very quick and easy. Very quick and easy.
Number of Servings: 4

Ingredients

    Egg, fresh, 10 large
    Capsicum - Red Raw, 200 gram(s)
    Onions, raw, 1 cup, chopped
    Zucchini, 1 cup, sliced
    Olive Oil, 2 tbsp

Directions

Chop all veggies and beat eggs in bowl.
Heat oil in large frypan. (I use my electric frypan)
Fry onion for about a minute till softened.
Add zucchini and capsicum.( also garlic if you want. It won't change the value.
Once veggies are soft, add beaten egg to pan. Allow to move under and over all veg.
Cook until nearly dry on top. Cut ion pieces and flip to finish top.
Don't forget to add in what you eat it with eg bread or fat-free chips.
ENJOY

Serving Size: Makes 4 generous serves but can add more veggies to feed more people.
