Bean & Chicken Stew

Introduction

This is a very filling stew I made while cleaning out my cabinets! This is a very filling stew I made while cleaning out my cabinets!
Number of Servings: 12

Ingredients

    20 oz boneless, skinless chicken breast
    14-1/2 oz diced tomatoes
    2 tsp minced garlic
    15 oz sliced potatoes (canned)
    15-1/2 oz great northern beans (canned)
    15-1/2 oz black beans (canned)
    15 oz garbanzo beans (canned)
    1-3/4 cup lima beans
    15 oz tomato sauce (canned)

Directions

Simmer frozen chicken breast in diced tomatoes and garlic for 20 minutes or until cooked through.
Take 2 forks and shred the chicken.
Add all the veggies (drained and rinsed) then tomato sauce.
Cover and simmer for about 30 minutes.

    This is easily converted to the crock pot by putting it all in and simmering all day then shredding the chicken before serving. I also soaked dried beans overnight and tossed in freshly cubed potatoes instead of canned. I tripled the recipe (we have a 14-yo boy) and added some Italian seasoning. - 8/8/09

    Wow, that is a LOT of sodium per serving! Substitute "no-salt added" tomato products, and thoroughly rinse the canned goods to help with that. - 8/8/09

    This would be great for in the Crock Pot with dried beans. Soak beans, then add all other ingredients, turn on low and cook for hours. Sounds Great. Thanks. - 8/8/09

    This looks great! HOwever, I would sub all the canned for fresh only due to the high sodium content,, but the retio is there for anybody wanting to multiply the recipe!! - 8/8/09

    Very easy and very good. Made lots of food and can easily be doubled. Can't complain when you pretty much pour everything straight out of the cans - and have a healthy meal. - 7/12/08

    Sound tasty and healthy--plenty of fiber, but would *never* use canned potatoes! Many canned goods are great, like the rest in the recipe. But sometimes, if you don't use fresh, frozen can be a better option. I much prefer frozen black eyed peas to canned. But, your choice, of course. - 11/13/09

    Recipe looks great.I shall substitute all canned products with fresh. Beans soaked overnight, then cooked 2 hours.Fresh potato and maybe a carrot or two. - 11/13/09

    Very similar to a white chicken chili I've made. But the potatoes aren't really necessary. Extra vegies like bells peppers and onions, and a can of chopped chilie peppers really jazz it up - 11/13/09

    I will make this with frozen vegetables to nix all that sodium & I will leave out black & garbanzo beans since I don't like them. Lots of fiber and protein ~ the more beans you eat, the less gas you experience, esp if you eliminate yeast from your diet :) - 8/10/09

  • I have a recipie really similar to this one but I never used garbanzo beans before, so I'll have to give that a try. I also used fresh ingredients where I could because of the sodium, but everything sounds really great! - 11/15/09
