Mushroom Stroganoff

Number of Servings: 8

Ingredients

    Serve over pasta (16 oz. pkg) or potatoes

    1 large onion chopped
    Dash cayenne
    1 lb. Mushrooms, sliced
    2 c. seitan, chopped
    1 c. soy milk
    2 T. arrowroot in 1/3 c. water
    1 c. veg broth
    2 T. soy sauce
    2 T. apple juice or sherry
    3 T. light sour cream

Directions

Saute onion for 2-3 min. Add the mushrooms and saute until mushrooms are slightly limp. Add soy milk, broth soy sauce, sherry and cayenne. Stir well. Add seitan or browned gimme lean. Cover and cook 20 min. Add arrowroot mixture and stir until thickened. Stir in sour cream.

This will keep for 1 week in refrig. Do not freeze.

Variation: You may add 1 pkg of browned Gimmee Lean or Soy Crumble before adding arrowroot instead of Seitan. Calorie count is using gimme lean and serving over 2 oz. pasta per serving.
