Gluten Free Chicken Cordon Bleu

Ingredients

    Chicken Breast, no skin, 9 ounces (remove)
    *Hormel Cooked Ham Deli, 1.5 oz (remove)
    *Cooper Sharp American Cheese, 1 oz (remove)
    *Food For Life, Wheat & Gluten-Free Brown Rice Bread, 2 serving (remove)
    *walnuts - 1 tbsp chopped walnuts = .065 of a cup, 1 serving (remove)
    Egg, fresh, 1 large (remove)
    Milk, 1%, 1 fl oz (remove)

Directions

pound chicken breast until it is fairly thin
cut in half
place half of cheese and half of ham on the chicken and roll up and secure with toothpicks

toast 2 slices of bread and then make into bread crumbs using a coffee grinder. Grind the walnuts and mix with bread crumbs. coat the chicken with this crumb mixture. Brown the chicken in a pan on top of the stove in the canola oil and then bake at 375 for 30 minutes.
