Tofu "Egg" Salad

Introduction

Better than the real thing ! ! (This other version of my recipe didn't have the correct calories.) Better than the real thing ! ! (This other version of my recipe didn't have the correct calories.)
Number of Servings: 6

Ingredients

    1 pkg. Banyan Hard Tofu (16 oz.) drained
    1/4 cup Miracle Whip Light
    1/4 cup sweet relish
    2 Tbsp. yellow mustard
    Dash salt
    Dash coarsely ground black pepper

Directions

With clean hands crumble tofu into medium mixing bowl. Add remaining ingredients and mix well. Serve immediately or refrigerate.

Makes 6 generous sandwiches. You can also scoop this on top of a bed of romaine salad.
