Ingredients

1/4 c. margarine
1/4 c. all purpose flour
3 c. chicken broth
3 c. 2% milk
0.5 tsp pepper
6 oz 2% velvetta, cubed
5 oz sharp cheddar cheese, shredded
3 c. broccoli, chopped small
1 c. carrots, grated
1/4 c. onion, diced
1 tsp garlic, chopped fine or grated
Directions
This is mostly a dump and stir recipe.
To make it easy on yourself, go ahead and chop/grate ingredients first. Using a large pot, on med saute onions until translucent then add garlic and saute for 1 min. Add butter to melt, then drop heat to low and whisk in flour. Stir constantly/whisk for 2 min to cook out raw flour flavor. Add milk and chicken broth and pepper. Turn heat up and bring to a boil, then reduce heat and to med-low and simmer for 10 minutes.
While simmering, go ahead a steam broccoli for 2 minutes in a separate pot for 2 minutes, just until tender and set aside.
Back to main pot, slowly add in both cheeses, stirring until completely melted. Add carrots then broccoli. Cook 5-7 more minutes and try to keep your fingers out. :) Enjoy.
