Quick, Easy, Hardy Quesadilla

Introduction

This does NOT taste like it's missing anything. Very hardy, very filling & can easily serve 4 as a light lunch (with a side salad) or as an appetizer. Your family will NOT know that this is a low-cal, high fiber treat! If the high sodium is a problem, I suggest switching out the meat, bacon & cheese for lower sodium alternatives. This is a great way to use up ingredients that are in the house when you need a quick yet hardy meal. This does NOT taste like it's missing anything. Ingredients

    2 Large Burrito-style Whole Wheat Tortillas - Divided

    1/4 Fresh Baby Spinach

    1 oz Wegmans Oven Browned Just Turkey - No Salt Added

    1 oz Alpine Lace Reduced Fat Swiss

    1/4 Cup 2% finely shredded sharp cheddar cheese

    2 Slices pre-cooked pork bacon (cook in microwave until crispy)

Directions

Place one tortilla in non-stick cookig pan
Layer remaining ingredients
Top with remaining tortilla
Place a bacon press or heavy plate on top of quesadilla
Turn stove burner on medium heat & cook for 3 minutes.
With a large spatula, carefully turn over so that ingredients do not fall out.
Place bacon press or heavy plate on top of quesadilla
Cook additional 2-3 minutes.
If all cheese has not melted & tortilla is not brown enough, continue to cook on both sides until completely cooked through.
Transfer to large plate & cut into 8 serving pieces.
Enjoy!
