Soup, Easy Vegetable, Carol's

Ingredients

    1 1/2 pounds lean ground beef
    1 c. chopped onion
    1 c. diced celery
    1 pkg. Lipton onion soup mix
    2 cans beef broth
    4 cups water
    1/2 c. fine barley, washed
    2 bags mixed vegetables, frozen
    2 cans diced tomatoes (14.5 oz.)
    1/2 tsp. ground red pepper
    1/2 tsp. salt

Directions

Brown beef in a large soup pot. Drain all fat and discard. Add onions and celery; cook until onions become clear. Add onion soup mix, water, beef broth and barley. Cook on low-medium heat for 20 minutes (follow cooking time on the barley package). Add the frozen vegetables, tomatoes with juice,pepper and salt. Bring back to a boil and cook until vegetables are done, about 10 minutes.

I usually serve this with a sprinkle of shredded cheese or Parmesan.

This makes a lot of soup so I freeze containers for another day!
